Pad Krapow by Dak Wichangoen

My first guest is the talented michelin star chef and new masterchef judge Dak Winchangoen who shares her favorite go-to recipe Pad Krapow.

Dak is the head chef of the Michelin star restaurant Kiin Kiin, so she totally has her cooking techniques in order.



Let's get to it, here is the fast and easy meal for you.


Pad Krapow by Dak Wichangoen


Ingredients:

- 4 pork chops

- 1 clove of garlic, sliced

- 1 red onion, in thick slices

- 200 g bean sprouts

- 500 g fresh green beans (haricot verte)

- 1 pot of fresh basil

- ½ pot of fresh coriander

- 4 eggs


Ingredients for stir fry sauce:

- 5 cloves garlic

- 3 chilies (or more if you like it HOT)

- ½ pot of coriander

- 300 ml oyster sauce

- 200 ml soy

- 100 ml fish sauce


Pre-NOTE

If you wanna eat rice with the dish, get these cooking according to packacket instructions.





Daks stir fry sauce:

Step 1

In a blender add sliced chili, chopped garlic and coriander and blend it with the fish sauce, oyster sauce and soy sauce.


The main dish

Step 2

Fry the pork chops in a hot pan with oil for 1-2 minutes on each side.

Season with salt and pepper set aside to rest as you cook the veggies.


Step 3

The vegetables:

Heat up a wok or large pan and caramelise the garlic in the oil over high heat.

Add the onions and continue fryin for a minute or 2.

Add the green beans and 100 ml (just under half a cup) of stir fry sauce and cook it at high heat for a few minutes.

Just before serving throw in a half of the fresh basil and coriander and flip it.


Step 4.

Fry the eggs in plenty of oil.


Step 5.

Plate the stir fry veggies topped with bean sprouts place the porkchop and an egg on top, top with the remaining fresh herbs.




TIP

- The rest of the stir fry sauce can be stored in the refrigerator
