Okonomiyaki waffle

The Japanese waffle theme part 3 is here.


The Osaka classic Okonomiyaki has now been turned into a waffle:


the okonomiyaffle is here.

The classic Okonomiyaki is made with cabbage, katsuobushi and nori seaweed topped with mayonnaise and sweet worcestershire sauce. Mmm... it is so delicious. However, my recipes does not allow for mayonnaise nor sweet anything sauce, but fear not - It will be super tasty, fast to cook and easy peasy to make - just like all the other recipes.





Okonomiyaki waffle Ingredients:

Yield: 2-3 waffles

Prep time 7 minutes

Cooking time 5 minutes per waffle


  • 2 medium sized potatoes (150g)

  • 1/4 oxheart cabbage

  • 1/2 onion

  • 2 eggs

  • 1 tbsp. olive oil

  • 1 tsp. baking powder

  • 1/2 tsp. salt

  • 1/2 tsp finely shredded fresh ginger

  • 1 topped tbsp. oat flour (blended rolled oats)

  • 1 tbsp soy sauce

  • 1 tbsp rice vinegar/ white wine vinegar

  • 1/2 tsp roasted sesame oil (optional)


Topping:

  • 1/2 cucumber

  • 1/4 head of oxheart cabbage

  • 1 carrot

  • 3 tbsp soy sauce sauce

  • 1 tbsp lemon juice or white vinegar

  • 1 tsp sesame

  • 100 ml yoghurt ( I use oat yoghurt)

  • 1 tbsp yellow mustard (unsweetened)


Step 1.

Peel and grate the potatoes. Slice the ALL cabbage finely - Put half aside for toppings.

Mince the onion, grate the ginger and combine the four.


Step 2.

Add eggs, and everything else.


Step 3. Turn on waffle iron, I set it on 4/5 spray with a tiny bit of oil.

Place 1 large spoonful of mixture in the middle of the waffle iron, then a spray of oil, close it up and cook for about 5 minutes - until it's golden brown. Place the okonomiyaki on a rack and cover with tin foil


Step 4.

Repeat step 3. one-two more times.

Step 5.

Peel the carrot.

Cut the cucumber and carrot into julienne ( matchstick shape) Mix both with cabbage, sesame and soy sauce with lemon juice.


Step 6

Combine yoghurt and mustard.


Step 7.

Plate the okonomiyaki with the crisp greens, then top with the yoghurt-mustard sauce.


Step 8.

Time to indulge in the okonomiyaffle !


TIP:

It tasted great the day after cold, I ate my second Okonomiyaffle cold straight out of the fridge.
