I have been craving Ice cream soooo much and I have also missed the opening hours of the local Nice cream shop, that makes non dairy ice cream. Well actually during their opening times there's a line and I hate standing in lines - so I decided to make the ice cream myself.
The basic recipe is the foundation of tons of variations, you can play around with it. One thing that is important to say: you need frozen bananas to do this - so buy the brown spotted bananas at your shop, peel and freeze them.
Coconut milk and vanilla
Yield: 4 scoops
Prep time: 10 seconds
Cooking time: none
Freeze time - couple of hours
2 frozen bananas in chunks
50 ml of coconut milk or cream
1/4 tsp vanilla bean powder or essence (or any other spice you'd like)
High Power blender (1000-1600W)- I have a Blendtec designer 625 with a twist jar.
If you are considering a limousine blender - I can really recommend this one (THIS POST IS NOT SPONSORED!), and if you don't remember back in 2007 they made some Amazing videos called "will it blend" and they blended an Iphone 2 - Have a look it's hilarious.
Or a high power food processor.
Warning: if you use a regular blender, it might not be able to blend the frozen bananas - and you might end up destroying your blender instead of making Ice cream.
Add all the ingredients to the blender.
Serve, sprinkle with things of your choice and eat.
